We dedicate ourselves to unearthing recipes that have disappeared from the modern table—regional specialties, manor house traditions, and dishes that tell stories of Britain's complex culinary heritage.

The intimate dining experience at Lanevora Supper House

Tonight's Heritage Menu

Each Lanevora menu forms a narrative journey through British culinary history, with dishes reconstructed from historical sources and adapted with contemporary techniques. Menus change seasonally and according to our ongoing research.

18th century Yorkshire Christmas Pie reimagined

Yorkshire Christmas Pie (c.1780)

Reimagining Hannah Glasse's spectacular nested game pie—a festival centerpiece featuring hand-raised hot water crust, layered game birds, and spiced forcemeat. Our version maintains the architectural ambition while adapting to contemporary palates.

Medieval Frumenty with modern technique

Frumenty (Medieval-Tudor)

A noble dish once served at coronation feasts, our frumenty interprets manuscripts from 1390-1520. Cracked wheat cooked in rich almond milk, infused with saffron and cinnamon, accompanied by slow-braised venison and preserved fruits—connecting dining traditions spanning centuries.

Norfolk Plough Pudding with caramelized sugar

Norfolk Plough Pudding (19th Century)

A forgotten celebration of agricultural renewal, this suet pudding combines heritage pork cuts, winter spices, and local ale in a steamed dome. Originally sustenance for field workers marking Plough Monday, we've elevated this regional specialty with refined presentation while honoring its humble origins.

Why Forgotten British Recipes

Historical British cookbook manuscripts

Britain's culinary heritage is often unfairly maligned or simply forgotten. Yet within historical manuscripts, household accounts, and family archives lies evidence of a sophisticated, seasonal, and deeply regional food culture that deserves rediscovery.

We delve into sources ranging from medieval household accounts to Victorian cookery manuscripts, each revealing distinctive approaches to ingredients, techniques, and flavors. From spectacular raised pies of the Georgian era to the delicate spicing of Tudor court cuisine, these dishes tell stories of cultural exchange, innovation, and regional identity.

Our culinary detective work involves deciphering archaic measurements, interpreting vague instructions, and sourcing heritage ingredients—all to create authentic yet accessible expressions of historical dishes. The results challenge preconceptions about British food while connecting diners to centuries of tradition.
